Vanilla Cupcakes (Vanilla Buttercream & Sprinkles)



Cupcake batter.
Preparation time: 5 minutes. Cooking time: 20 minutes. Yields: 24

3 large eggs
2 cup sugar

1 cup oil
1 cup sour cream
1 tsp vanilla extract

2 1/2 c all purpose flour
1 tsp baking powder
1/2 tsp baking soda
t.t salt

- preheat oven to 350F
- mix large eggs and sugar in stand mixer
- all oil, sour cream and vanilla
- sift dry ingredients, fold into egg/ oil mixture in 3 stages
- portion in paper lined muffin trays
- bake for approximately 20 minutes.

- decorate with vanilla buttercream and topped with sprinkles.
